Coffee Sponge Cake
Coffee sponge cake, ideal as a filling layer for mousses or cheesecakes.

instant coffee powder (insoluble, added directly to the batter)

melted butter

Whip the egg mixture
Combine the eggs, sugar, and salt in a bowl. Heat over a bain-marie until the temperature reaches 40 °C (about 104 °F), then whip with a whisk until pale white, voluminous, and thick.

Add the flour and coffee
Sift in the cake flour together with the coffee powder and fold gently until just combined.

Add the butter and bake
Pour in the melted butter and fold gently until just combined — do not overmix, or the batter will deflate. Transfer the batter into a greased mold and bake at 165 °C (about 330 °F) for roughly 60 minutes.
