American-Style Fried Onion Rings

American-Style Fried Onion Rings

Ingredients

Onion (remove the old skin, cut off the stem, wash, slice into rounds and separate into rings) 1
Egg (beaten) 1
Low-gluten flour 150 g
Baking powder 1 g
Breadcrumbs 100 g
Salt 2 g
White pepper powder 1 g
Ketchup (for dipping) to taste
Black pepper powder (for sprinkling) to taste
Salad oil (for frying) to taste

Prepare the onion

Peel off the old membrane of the onion, trim off the stem, wash well, and cut crosswise across the grain into rounds about 1 cm thick. Separate the rounds into individual onion rings, add the salt and white pepper powder, toss to combine, and marinate for 10 minutes.

Make the batter and coat

Crack the egg into a mixing bowl and beat until smooth. Add the low-gluten flour and baking powder, then stream in a little water and whisk into a thick batter. Dip the marinated onion rings into the batter to coat them evenly, then roll them in the breadcrumbs until fully covered.

Fry

Set a wok over medium heat and add the salad oil. Heat the oil to about 170–180°C (60–70% hot). Fry the breaded onion rings on low heat for 2–3 minutes until golden brown. Remove and drain off excess oil, arrange on a plate, and serve with ketchup for dipping, or sprinkle with salt and black pepper powder.
