Silver fish (also called silver bait fish) are small dried fish with a delicate texture. They absorb flavors beautifully and pair wonderfully with the punch of fresh garlic. This classic home-style Chinese dish is perfect for busy weeknights.

Prepare the silver fish

Place the dried silver fish in a bowl and cover with warm water. Let them soak for about 10 minutes until they soften and become pliable. Drain well and pat dry with paper towels.

Get ingredients ready

While the fish soak, peel and slice the garlic diagonally into thin pieces. Cut the ginger into fine shreds. Having everything prepped before cooking is key for a quick stir-fry.

Heat and bloom aromatics

Heat oil in a wok or large skillet over medium-high heat until shimmering. Add the ginger shreds and stir-fry for about 30 seconds until fragrant. Toss in the garlic slices and cook briefly until just starting to turn golden—don't let them burn.

Stir-fry until done

Add the drained silver fish to the wok. Stir-fry continuously for 3-4 minutes, letting the fish get lightly crispy on the edges. Season with salt and a splash of soy sauce. Toss everything together until well coated, then serve immediately with steamed rice.
