Ingredients

minced pork (finely chopped) 115 g (4 oz)
vermicelli (cut into 15 cm segments, soaked in water until soft, drained of excess moisture) 60 g (2 oz)
chicken stock (for heating) 1/2 cup
salt to taste
oil 2 tbsp
minced garlic 2 tsp
sesame oil 1 tsp
scallions (chopped) 2
red chili pepper (chopped) 1
water (for marinating) 1 tbsp
dark soy sauce (for marinating/starch slurry) 2 tsp
Shaoxing wine (for marinating) 1 tsp
cornstarch (for marinating) 1/2 tsp
Sichuan chili bean sauce (for starch slurry) 2 tsp

Instructions

1

Prep

Mince the pork, add the marinade ingredients, and marinate for 15 minutes. Mix the starch slurry ingredients evenly and set aside.

2

Prep

Cut the vermicelli into 15 cm segments, soak in water until soft, then drain off excess moisture.

3

Method

Add chicken stock, salt, and vermicelli to a 1-liter glass measuring cup, seal tightly with plastic wrap, and heat on high for 4 minutes.

4

Method

Add oil and minced garlic to a shallow dish, heat on high for 2 minutes. Add the minced pork and break it up with a spatula, then heat on high for a short while. Stir the starch slurry thoroughly and add it to the dish, mixing well with the pork. Add the chopped red chili, top with the vermicelli, cover, and heat on high for 2 minutes.

5

Method

If serving directly from the dish, you can flip the vermicelli and pork so the pork is on top and vermicelli at the bottom. Alternatively, you can invert it onto a plate, drizzle with sesame oil, sprinkle with chopped scallions, and serve.
