Braised Baked Pork Slices

Ingredients

pork (cut into thin slices) 500 g
potatoes (washed, peeled and sliced) 250 g
shredded shallot 50 g
salt 1 tsp
ground white pepper 1/3 tsp
cooking oil 1 cup
fresh stock 200 g
wasabi premium fresh sauce (for dipping) 3 tbsp

Instructions

1

Prepare the ingredients

Cut the pork into thin slices, sprinkle with salt and pepper, and marinate for 2 hours. Wash the potatoes, peel them, and slice into rounds.

2

Fry the potatoes

Pour the cooking oil into a wok and heat to about 60% hot (roughly 150°C). Add the potato slices and fry until their moisture has evaporated. Remove with a slotted spoon and drain the oil.

3

Sear the pork

Using the remaining oil in the wok, pan-fry the pork slices until they are about half-cooked, then remove and set aside.

4

Bake

Spread a thin layer of cooking oil over a baking tray. Scatter the shredded shallot over the tray, arrange the seared pork slices and fried potato slices on top, then pour over the fresh stock. Bake in an oven preheated to 150°C for about 10 minutes. Transfer to a serving plate and serve hot with the wasabi premium fresh sauce on the side for dipping.
