Instructions
Prepare the ingredients
Soak the deer penis in warm water until fully rehydrated. Scrape off the coarse skin and any impurities, split it open, rinse it clean, and cut it into 3 cm-long sections. Cut the chicken into strips and chunks, wash the pork knuckle, soak the Chinese yam until soft, and cut it into seed-shaped slices 2 cm thick. Pick any impurities from the goji berries and set aside.
Blanch the deer penis
Put the ginger, scallions, cooking wine, and deer penis into a pot of water. Boil over high heat for 15 minutes, remove the deer penis, and reserve the broth. Repeat this blanching process 3 times, setting the meat aside and keeping the broth after each blanching.
Stew the main ingredients
Set a clay pot over the heat and add the pork knuckle, chicken, deer penis, and enough water. Bring to a boil over high heat and skim off the foam. Add the cooking wine, scallions, ginger, and Sichuan peppercorns, then stew gently for 2.5 hours. Remove the ginger and scallions, lift out the pork knuckle, and reserve it for another use.
Add the remaining ingredients
Add the Chinese yam, goji berries, salt, ground pepper, and MSG to the pot. Raise the heat to high and stew until the Chinese yam is very tender.
Plate and serve
Arrange the Chinese yam in one bowl as a base, then top it with the chicken pieces. Add the deer penis and goji berries, pour over the reserved broth, and serve.
