Lotus Root and Pork Rib Soup

Story

This comforting soup brings out the natural sweetness of lotus root as it simmers gently with pork ribs. The broth becomes rich and aromatic, making it a warm and nourishing dish perfect for everyday meals.

Ingredients

Pork ribs (cleaned and cut into 3cm segments) 300g
Lotus root (peeled, cut into chunks, and washed) 300g
Green onions 2 stalks
Ginger (washed and cut in half) 1 piece
Cooking wine to taste
Salt to taste
Pepper to taste
MSG to taste

Instructions

Prep ingredients

Wash the pork ribs and chop into 3 cm long sections; scrape off the rough skin from the lotus root surface, cut into pieces, and wash; wash the ginger and cut in half

Blanch ribs

Put an appropriate amount of water into the pot, add half a piece of ginger, green onions, and cooking wine; after bringing to a boil, add the pork ribs, blanch, then remove and set aside

Stew ribs

Place the wok over the heat, add water, add the pork ribs, half a piece of ginger, and green onions; bring to a boil over high heat, skim off all the foam, then switch to low heat and simmer for about 20 minutes

Transfer to clay pot

Pour the lotus root, pork ribs, and soup together into a clay pot, simmer for another 30 minutes, remove and discard the ginger and green onions, add refined salt, pepper, and MSG to serve
