Steam the Crab
Rinse the fresh crabs clean, tie their legs and feet with string, place them belly-up in a steamer, and steam over boiling water until fully cooked.

Extract Crab Meat
Let cool, remove the crab shell, take out the roe, chop off the crab legs, and squeeze out the meat. Split the crab body open, extract all the meat, place it in a clean dish, and set aside.

Mix Sauce and Toss
Next, mix the vinegar, soy sauce, fine salt, white sugar, scallion, ginger, garlic, chili powder, MSG, and sesame oil into a sauce, pour it evenly over the crab meat, and serve.
