Fresh Milk Bird's Nest with Ginger and Egg Whites

Ingredients

Shredded bird's nest (soak in water for 1 hour, change water, simmer with ginger and scallion for 5 minutes then steam until soft) to taste
Egg whites (mix with cornstarch, poach in warm oil then rinse off oil) to taste
Fresh milk to taste
Diced ginger (for sautéing aromatics) to taste
Salt 1/2 tsp
Sugar 1/3 tsp
Cornstarch (some for egg whites, some for thickening) 1 1/2 tsp
Sesame oil a pinch

Instructions

1

Prepare the bird's nest

Soak the shredded bird's nest in water for 1 hour, then change the water. Add ginger and scallion and gently simmer for 5 minutes over low heat. Turn off the heat and let the bird's nest steam until soft, then drain off the water.

2

Prepare the egg whites

Whisk the egg whites together with 1 tsp of cornstarch until evenly combined. Pour into warm oil and poach until just set, then remove and rinse off the oil with clean water. Drain well and set aside.

3

Stir-fry and finish the dish

Heat a wok until hot, add the diced ginger and stir-fry to release its aroma. Pour in the fresh milk, then add the bird's nest and the seasonings and bring everything to a boil. Add the prepared egg whites and toss gently until evenly mixed, then finish and serve.
