Fried and Steamed Dog Meat

Ingredients

Cooked white dog meat (skin removed, cut into thick slices, scored with shallow cross-hatches, then cut into domino-sized blocks) 250 g
Yam (peeled, cut into rolling-cut wedges, or winter melon) 250 g
Sesame oil (actual usage 60 g) 500 g
Dried chili peppers (washed, stems removed) 2
Soy sauce 15 g
Doenjang (Korean stew paste) 10 g
Cooking wine 15 g
Dog bone broth 50 ml
Ginger (washed, peeled, cut into chunks) 15 g
Scallion (peeled, washed, cut into small segments) 25 g
Star anise (rinsed with water) 5 g
MSG 2 g

Instructions

Marinate the meat blocks

Remove the skin from the cooked white dog meat, cut into thick slices, score with shallow cross-hatches, then cut into domino-sized blocks. Place in a bowl and toss evenly with soy sauce and cooking wine. Wash the yam, peel it, and cut into rolling-cut wedges; set aside.

Prepare the aromatics

Peel the scallions, wash them, and cut into small segments. Wash the fresh ginger, peel it, and cut into chunks. Wash the dried chilies and remove the stems. Rinse the star anise with water; set aside.

Fry and steam the dish

Heat a wok over high heat, add the sesame oil and heat until hot, then add the marinated meat blocks. Fry until golden brown, remove, and drain the oil. Arrange the fried dog meat slices in a bowl, add MSG, doenjang, dog bone broth, scallion segments, ginger chunks, dried chilies, and star anise. Steam until cooked through, then remove and discard the scallions, ginger, dried chilies, and star anise. Invert onto a serving plate and serve.
