Ingredients

soaked shark fin 500 g
hen breast meat 250 g
pork fat 50 g
soaked large dried shrimp (golden hook) 40 g
egg white 3

Step 1

Pound the hen breast meat and pork fat into a paste. Add the egg whites and stock and mix well to form a chicken mousse. Rinse the soaked shark fin, combine it in a steamer with stock, scallion segments, ginger slices, and Sichuan peppercorns, and steam for 2 hours. Remove and set aside.

Lightly grease a large flat plate. On the plate, shape the chicken mousse into 12 gourd forms, and press a dried shrimp onto the top of each gourd. Steam for 10 minutes, then remove.

Heat Sichuan pepper oil in a wok. Add the triple-clarified broth, seasonings, and the steamed gourd-shaped chicken pieces, and simmer over low heat for 5 minutes. Lift them out and arrange in a bowl. Then add the shark fin to the wok and bring to a boil, thicken with a cornstarch slurry, and spoon into the center of a serving plate. Arrange the gourds around the perimeter to finish.
