Honey-Glazed Feicheng Peach

A traditional specialty from Shandong, made with Feicheng peaches that are battered, fried, and coated in a slow-simmered honey syrup. Golden and glossy, with a sweet, fragrant, and refreshing flavor.

Honey-Glazed Feicheng Peach

Ingredients

Feicheng peaches (peeled and cut into chunks) 3
Osmanthus sauce 3 g
White sugar (used in batches) 200 g
Flour 100 g
Peanut oil (approximately 75 g used) 750 g
Honey 20 g

Instructions

Step 1

Peel the Feicheng peaches and cut them into wedge-shaped chunks. Coat them evenly with dry flour and set aside.

Pour the peanut oil into a wok and heat over medium heat until it reaches moderate-hot (about 60% of smoking point). Add the peach chunks, then move to low heat and fry through until golden yellow. Remove and drain.

Step 3

Reserve 25 g of oil in the wok. Add 25 g of white sugar and stir-fry until it turns red. Add 150 g of water, 175 g of white sugar, and the honey, and cook for about 2 minutes. Add the fried peaches along with the osmanthus sauce, and continue cooking until the sauce thickens. Transfer to a plate and serve.
