Ingredients

flour 200g
caster sugar 100g
salted butter (softened, cut into small cubes, reserve 20g for greasing the baking mold) 100g
milk 50ml
eggs (yolks and whites separated) 2
yeast half packet
cocoa powder 1 tbsp
vanilla sugar half packet
salt a pinch

Instructions

1

Cream butter and sugar

Use an electric hand mixer to beat the butter and sugar until the mixture turns slightly pale and fluffy. Separate the egg whites and yolks. Add the egg yolks to the butter-sugar mixture, then gradually add the milk while continuing to stir.

2

Add flour

Mix the flour and yeast in a large bowl, then gradually fold the dry ingredients into the batter.

3

Whip egg whites

Add salt to the egg whites, then beat with an electric hand mixer until very stiff peaks form.

4

Divide the batter

Split the batter into two bowls. Add the vanilla sugar to one bowl, and mix the cocoa powder into the other. Gently fold half of the whipped egg whites into each bowl, being careful not to deflate the bubbles.

5

Assemble and bake

Grease a rectangular baking mold and dust it lightly with flour. Pour a layer of vanilla batter first, then top with a layer of chocolate batter, alternating with the remaining batter. Bake at 210°C for 10 minutes first, then lower the temperature to 180°C and bake for an additional 20 minutes. Remove from the mold and cool on a wire rack.
