Ingredients

large shrimp 13
breadcrumbs 100 g
cooking wine 10 g
refined salt 3 g
MSG 5 g
chopped scallion and ginger 5 g
egg white 50 g
flour 50 g
lard 150 g

Instructions

1

Preparation and Marination

Remove the heads and shells of the large shrimp, keeping the tails, wash them, take out the vein, and slice open the back with a knife to form a fan shape. Marinate with cooking wine, refined salt, MSG, and chopped scallion and ginger for 15 minutes to absorb the flavor.

2

Coating

Coat with flour and egg white, then stick breadcrumbs onto both sides of the shrimp body.

3

Deep-Frying

Fry in lard heated to about 70% hot until golden brown, then turn to low heat to cook through, then return to high heat for a brief fry before removing. Cut and arrange on a plate to serve.
