Ingredients

self-raising flour 110 g / 4 oz / 1 cup
golden caster sugar 110 g / 4 oz / 1/2 cup
baking powder 1 tsp
mixed spice or pumpkin pie spice 1/2 tsp
ground nutmeg (freshly grated) 1/2 tsp
margarine (softened) 110 g / 4 oz / 1/2 cup
eggs (large, free-range) 2
lemon zest (unwaxed lemon) 1
fondant icing or glaze (made with lemon juice or water (see p.68 or p.16)) 1 portion
food coloring (gel preferred) to taste
royal icing (see p.16) 2 tbsp
sprinkles (optional) to taste

Instructions

1

Preparation

Preheat the oven to 160°C/325°F/Gas mark 3. Line a 12-hole muffin tin with paper cases.

2

Make the batter

Sift the flour, sugar, baking powder and spices into a large bowl, food processor or stand mixer. Add the margarine, eggs and lemon zest, and beat until light and fluffy. Scrape down the bowl to make sure everything is evenly combined, then beat for a moment more.

3

Baking

Spoon the batter into the paper cases and bake for 20 minutes until firm to the touch and golden. Remove and leave to cool.

4

Base decoration

Prepare the fondant icing or glaze and tint it with food coloring to your desired shade. If using fondant icing, gently warm it over a bain-marie. Cover the cakes and leave to dry.

5

Piped decoration

Tint the royal icing in various colors and pipe decorative Easter egg designs onto the cakes using a piping bag fitted with a fine nozzle. Add sprinkles for a sparkling finish if desired.
