Port Wine Baked Plums

Ingredients

large red plums (pitted) 12
vanilla pods (split lengthwise and cut into small pieces) 6
almond flour 200 g
powdered sugar 75 g
orange or lemon zest (julienned) 4 tsp
orange blossom water ½ to 1 tbsp
Port wine 100 ml
fresh cream (for serving) to taste

Instructions

1

Prepare the Plums

Preheat the oven to 190°C (375°F). Use a pitter to remove the pits from the 12 plums and discard them.

2

Make the Almond Filling

Halve the vanilla pods lengthwise and crosswise. Combine the almond flour, powdered sugar, citrus zest, and orange blossom water in a food processor and pulse to a crumbly paste. Pinch and roll into balls, then shape into 12 equal small oval portions.

3

Stuff and Bake

Press each almond oval firmly into a plum, then push 2 small pieces of vanilla pod into the almond filling. Stand the plums upright in a baking dish and drizzle the Port wine around them. Bake in the oven for 10 minutes, until the fruit is fragrant, tender, and bubbling. Serve with fresh cream.
