Ingredients
Instructions
Prepare the lamb saddle
Remove the membrane and fat from the top of the rib section. Trim the fat and membranes from the lower part and around the lamb kidneys. Separate the membrane from the lamb saddle.
Prepare the lamb kidneys
Insert a bundle of thyme, rosemary and sage between the lamb kidneys. Wrap the kidneys in kidney fat, tie securely with kitchen twine.
Season the lamb saddle
Sprinkle thyme leaves inside the lamb saddle. Season with salt and pepper.
Make the lamb sauce
Heat peanut oil in a frying pan, add lamb bones and trimmings, sear over high heat until golden. Drain off the oil. Add butter, onion, shredded carrot and celery, bay leaf bundle and a pinch of mignonette pepper. Add cold water to cover, scrape the bottom of the pan to dissolve meat juices, season lightly with salt. Simmer over medium heat until the liquid turns a rich colour, strain. Return to the heat, skim off foam, season. Keep warm for later use.
Prepare the vegetables
Blanch the young onions and leeks in boiling salted water, shock in cold water and drain. Trim the roots off the asparagus, cut into 6cm segments, slice on a diagonal, then cut lengthwise. Prepare the leeks in the same way.
Prepare the mushrooms
Place the black trumpet mushrooms in a frying pan, add a pinch of salt, cover and simmer over medium heat until they release their liquid. Drain. Sauté the chanterelles and black trumpet mushrooms separately.
Roast the lamb saddle
Skewer the lamb saddle and place in the oven. Halfway through cooking, brush the lamb with peanut oil using a sprig of thyme. Roast for 25-30 minutes until golden and crispy. Let the lamb saddle rest for 10 minutes, then sprinkle with flaky sea salt and freshly ground pepper.
Make the garlic butter
Mix 50g of softened butter with 1 clove of chopped garlic, 1 tablespoon of chopped flat-leaf parsley, salt and pepper.
Roast the vegetables
Brush the vegetables with olive oil, place on a hot grill rack. Season with salt and pepper.
Make the butter sauce
Heat 150g of butter in a frying pan until it turns a nutty brown colour. Add 2 peeled and sprouted garlic cloves, breadcrumbs, 1 tablespoon of chopped rosemary and 1 tablespoon of thyme. Sauté for a few minutes until golden, stirring constantly. Remove the garlic cloves, pour the sauce over the lamb saddle.
Plate the dish
Remove the kitchen twine from the lamb saddle, place on a serving plate. Arrange the roasted vegetables around it. Drizzle with some of the lamb sauce, serve the rest in a small bowl on the side.
