Roasted Prawns

Ingredients

Prawns (keep head and tail, shell removed, back split open connected, deveined) 14
Egg whites (beaten until foamy) 300 g
Shrimp oil 150 g
Raw oil 25 g
Cooking wine 25 g
Scallions (minced, part for marinating, part for sprinkling) 25 g
Ginger (minced, juiced for marinating) 25 g
MSG 7 g
Salt 5 g
White pepper 1 g

Instructions

1

Preparing the prawns

Keep the heads and tails on the prawns and peel off the shells. Slice along the back with a knife (the two halves should remain connected), remove the vein and rinse clean. Lightly pound the prawn meat with the back of the knife, place in a bowl, add scallions, ginger juice, cooking wine, MSG, and salt, mix well and marinate.

2

First roasting

Place the marinated prawns into a glass dish with the shrimp oil, transfer to a 150°C oven, and roast for about 8 minutes (until you hear the oil sizzling), then remove.

3

Second roasting

Beat the egg whites until foamy and pour them over the prawns. Return to the oven for about 2 minutes, then remove. Drizzle with raw oil, sprinkle with minced scallions and white pepper, and serve.
