Shrimp Paste Stuffed Bread
A traditional deep-fried dish from Zhejiang, made by stuffing minced shrimp between slices of bread and frying until light golden. Crisp on the outside and tender within, it is a classic accompaniment to drinks.

Preparing the Shrimp Paste
Rinse the shrimp meat under clean water, squeeze out excess moisture, and mince it into a paste. Place the shrimp paste in a bowl together with the egg white, cornstarch, fine salt, MSG, white pepper, and cooking wine, then mix thoroughly until it becomes sticky and elastic.
Stuffing into the Bread
Cut the bread into slices about 4 cm long and 2 cm wide. Use a table knife to spread the seasoned shrimp paste evenly over each bread slice.
Deep Frying
Heat the cooking oil in a pan. Carefully lower the shrimp-paste-covered bread slices into the oil one at a time, paste-side down. Keep the oil at a moderate temperature. Fry until the paste changes color, then flip the slices over and continue frying until they turn a light golden color before removing them. The bread burns very easily, so take care not to over-fry.
