Braised Sea Worms
A signature Cantonese dish featuring tender, fragrant rice worms served with vermicelli, garlic, and dried tangerine peel.
Ingredients
sea worms (washed and ready)
500 g
glass noodles (soaked until soft)
1 small handful
garlic (minced)
3 cloves
dried tangerine peel (minced)
a small piece
ginger (minced)
2 pieces
salt (for seasoning)
to taste
oil (for stir-frying)
to taste
water (for braising)
to taste

Prepare the Ingredients
Rinse the sea worms, soak the glass noodles until soft, and mince the garlic, dried tangerine peel, and ginger.

Bloom the Aromatics
Heat oil in a wok, then add the garlic, dried tangerine peel, and ginger and stir-fry until fragrant.

Stir-Fry the Sea Worms
Add the sea worms and stir-fry.

Braise
Pour in some water, cover, and braise for about 20 minutes.

Add the Noodles
Stir in the glass noodles and cook until soft and silky, then season with salt to taste.
