Cheese Bomb (Bombe au fromage)

Whip the cream cheese together with heavy cream and sugar, fold in the dried fruit and nuts, decorate with candied orange peel and jam, then freeze until firm.

Cheese Bomb (Bombe au fromage)

Ingredients

cream cheese (drained, crumbled) 500 g
egg yolks 3
fine granulated sugar 100 g
heavy cream (approx 250ml, whipped) 1 small can
candied citrus peel (chopped) 50 g
raisins 50 g
hazelnut flour 25 g
peeled oranges (segmented, white pith reserved for garnish) 2

Mix the cheese filling

Whip the egg yolks and sugar until pale and fluffy. Mix the cream cheese and heavy cream until smooth, then fold into the sweetened egg yolks.

Add mix-ins

Reserve some candied citrus peel, walnuts, raisins, and orange zest for garnish. Chop the remaining mix-ins and fold into the cheese filling, ensuring the flavors are evenly distributed. Chill.

Garnish

Cut the thick white spongy pith from the orange segments (cut as thick as possible), boil in sweetened boiling water until soft, drain, then simmer in syrup until soft. Use this pith and the orange segments to garnish the top of the dessert.

Serve

Keep chilled until serving. Serve with small cups of orange segments, candied fruit, and syrup.
