Chicken Broth Bird's Nest

Ingredients

Bird's nest (soaked in warm water until expanded, remove feathers and impurities, rinsed clean) 25 g
Cooked ham strips 15 g
Green vegetables (blanched before use) 25 g
Fine salt 2 g
MSG 1.5 g
High-quality clear broth (used for cooking) 500 g
Cooked chicken fat (drizzled at the end) 5 g

Instructions

1

Soaking the Bird's Nest

Soak the bird's nest in warm water until expanded, then remove any feathers and impurities. Rinse thoroughly with warm water, place it in a serving pot, pour in boiling water, and steep for 5 minutes. Drain off the water, then steep again with fresh boiling water for about 10 minutes. Repeat this process 3 to 4 times total until the bird's nest becomes soft and gelatinous.

2

Plating

Place the prepared bird's nest into a serving bowl and arrange the ham strips and blanched green vegetables on top.

3

Pouring the Broth

Place a wok over the heat, pour in the clear broth, and season with fine salt and MSG. Pour the seasoned broth over the bird's nest in the serving bowl, then finish by drizzling the cooked chicken fat on top. Serve immediately.
