Instructions
Handle the Turtle Meat
Place the turtle into a pot of cold water, bring to a boil over high heat, then remove. Use a knife to chop through the back and belly of the turtle to halve it, and remove the innards. Put the turtle meat briefly into a pot of boiling water to blanch, then transfer into cold water, scrape off the skin membrane on the turtle's body, wash clean, chop off the tips of the claws, cut into 4 large pieces, keep the head and tail, and arrange it back into its original shape in a soup plate, set aside.
Steaming
Select half-fat half-lean ham, cut into elephant-eye slices and lay them over the turtle meat. Add ginger slices, salt, rock sugar, and cooking wine, then pour in water just enough to submerge the turtle meat. Cover the soup plate with a flat plate, place in a steamer and cook over high heat for 1 hour, take out, pick out the ginger slices, drizzle with cooked chicken oil, and serve.
