Crab Meat over Broccoli

Ingredients

flower crabs (picked apart after steaming) 2, about 400 g
broccoli (washed, stem removed, and cut into evenly sized pieces) 450 g
oil (tossed with the broccoli) 1 tbsp
salt 1/2 tsp
sugar 1/2 tsp
egg white (beaten) 1
finely chopped Jinhua ham 1 tbsp
chicken stock (for the crab-meat sauce) 1/2 cup
cornstarch (for the crab-meat sauce) 2 tsp
sesame oil (for the crab-meat sauce) 1 tsp
oil (for the crab-meat sauce) 1 tbsp
salt (for the crab-meat sauce) 1/4 tsp
sugar (for the crab-meat sauce) 1/4 tsp
white pepper (for the crab-meat sauce) a pinch

Instructions

1

Prepare the ingredients

Wrap each crab separately in plastic wrap and place them on opposite sides of the microwave turntable. Microwave on high for 4 minutes. Remove the crabs, let them cool, and pick out the meat, setting it aside. Wash the broccoli, remove the stems, and cut the florets into evenly sized pieces. Put the broccoli in a sealed heat-resistant bag. Pull the zip seal from both ends toward the center, leaving an opening about 3 cm wide for steam to escape. Stir the sauce ingredients together and set them aside.

2

Cook the broccoli

Place the bag of broccoli near the edge of the microwave turntable with the opening facing up. Microwave on high for 3 minutes. Remove the bag, transfer the broccoli to a deep dish, and drain off excess liquid. Add the salt, sugar, and oil, then toss to combine.

3

Cook the crab-meat sauce

Place the sauce ingredients in a 1/2-liter glass measuring cup. Microwave on high for 1 minute and stir well. Add the crab meat and half of the chopped ham, then microwave on high for 1 minute.

4

Combine and finish

Beat the egg white again until frothy, then stir it into the sauce until evenly combined. Microwave on high for 30 seconds. Drizzle the sauce over the broccoli, return it to the microwave, and heat for another 30 seconds. Sprinkle with the remaining chopped ham and serve in the same dish.
