Ingredients
Instructions
Make the syrup
Combine 500 g white sugar, 1000 g water, and 10 g citric acid. Bring to a boil to make the syrup, then set it aside.
Mix the flour
Put 500 g glutinous rice flour into a bowl, add 425 g syrup, and mix evenly with your hands.
Rest the dough
Work the mixture until it holds together when squeezed without crumbling, then let it rest for 30 minutes.
Sift the dough
Pass the dough through a coarse sieve to create a fine, powdery texture.
Steam the dough
Cover a steamer tray with a clean cloth, spread the sifted mixture on top, place it in the steamer, and steam over high heat for 35 minutes, until the rice cake dough is cooked through.
Knead the dough
Wrap the steamed dough in the cloth, moisten it with water, and knead it evenly while still hot to shape the rice cake dough.
