Brown Sugar Steamed Cake

Ingredients

All-purpose flour 120 g (Jinshahe wheat flour)
Cornstarch 60 g
Brown sugar 40 g
Warm water 110 g (mixed with the brown sugar)
Dry yeast 3 g

Instructions

1

Step 1

Prepare all the ingredients.

2

Step 2

Combine 40 g brown sugar with 110 g warm water in 1 bowl. In a second bowl, combine 3 g dry yeast with 40 g warm water. Mix both mixtures until evenly dissolved.

3

Step 3

Mix 120 g all-purpose flour with 60 g cornstarch, then pour in the yeast mixture and brown sugar mixture.

4

Step 4

Stir the batter until smooth. It should fall from the spoon in a continuous ribbon. This step is crucial because flour varieties differ; a batter that is too dry or too thin may not rise properly. If it is too dry, add a little water to adjust it.

5

Step 5

Pour the batter into a removable-base container and scatter chopped red dates over the top.

6

Step 6

Bring the water in the steamer to a hot boil, turn off the heat, and place the batter inside. Cover and let it proof for 20–30 minutes, until the batter has expanded to 2 times its original volume.

7

Step 7

Then steam over high heat for about 20 minutes. The cake is ready when done.

8

Step 8

The steamed cake is soft and fluffy, and the brown sugar pairs perfectly with the red dates.
