Gulaorou (Crispy Sweet and Sour Pork)

Ingredients

Pork (lean and fat) 200g
Tomato paste 30g
Cooking oil (about 100g actually used) 750g
Soy sauce 5g
Vinegar 25g
Salt 6g
Cooking wine 25g
Sugar 50g
Minced scallion 2g
Minced ginger 2g
Water starch slurry 75g
Flour 50g
Sesame oil (inferred) 5g

Instructions

Step 1

Wash the pork and cut into strips, then coat with starch, flour, and sesame oil.

In a bowl, combine soy sauce, vinegar, salt, cooking wine, scallion, ginger, tomato paste, and water starch slurry to make the sauce.

Heat oil in a wok to about 50% hot, add the pork strips, gently poach over low heat until cooked through, then increase to high heat and fry until golden and crispy. Remove and drain.

Leave a little oil in the wok, pour in the sauce and cook until thickened, add the fried pork strips, toss to coat, drizzle with sesame oil, and serve immediately.
