Fried Agastache Tips
A classic Shandong (Lu) cuisine dish featuring fresh agastache tips coated in a light batter and deep-fried until golden, crisp, and fragrant.
Ingredients
Fresh agastache tips (washed with 60°C hot water)
250 g
Flour
20 g
Sourdough starter
5 g
Fine salt (for marinating)
5 g
Vegetable oil (for making the crisp batter)
10 g
Peanut oil (for frying)
100 g
Instructions
1
Marinate the agastache
Take the fresh agastache tips, wash them with 60°C hot water, and briefly marinate them with fine salt.
2
Prepare the crisp batter
Place the flour in a bowl, add the sourdough starter and mix well with warm water, then stir in the vegetable oil. Let it rest for 5 minutes until it becomes a thin batter — this is the crisp batter.
3
Fry
Pour oil into a wok and heat over medium heat until it reaches about 70% hot (roughly 175°C). Coat the agastache tips evenly with the crisp batter, lower them into the oil, and fry until golden. Remove and drain.
