ham (cut into thick strips) 100 g
chicken wings (cooked, deboned, stuffed with ham strips) 5 pairs
cilantro (for garnishing the plate edge) 2
cooking wine 3 tsp
starch 3 tsp
light soy sauce 3 tsp
peanut oil 1 tbsp
ground black pepper 1 tsp
fine salt 2 tsp

Stuffing the Chicken Wings

Cut the ham into thick strips. Boil the chicken wings in water, trim off the tips and cut each into two sections, remove the bones, and thread the ham strips through the wings.

2

Steaming

Arrange the ham-stuffed chicken wings on a plate in a circular shape. Add clear broth, light soy sauce, cooking wine, fine salt, MSG, scallion, and ginger, then place in a steamer and steam until fully cooked.

3

Thickening and Pouring the Sauce

Heat the pot over high heat, add the base peanut oil, simmer the reserved steaming broth to reduce, thicken with starch, stir in ground black pepper, then pour the sauce over the main ingredients. Arrange cilantro around the edge of the plate.
