Braised Firm Tofu
A dish of fried, braised firm tofu, served with silky, tender shredded chicken and garlic sprouts.

Step 1
Place a pot over the heat, pour in an appropriate amount of stock and bring to a boil. Add salt, brown sugar, dark soy sauce, and fish sauce, then add the spice bag. Simmer over medium heat for 30 minutes, then remove the spice bag to make the braising liquid.
Step 2
Lightly rinse the firm tofu and cut into blocks. Briefly fry in hot oil, then remove and transfer into the braising liquid. Simmer over low heat for 20 minutes, turn off the heat, and soak for 10 minutes. Rinse the garlic sprouts, cut into sections, and blanch briefly in boiling water, then remove. Take the tofu out of the liquid, arrange on a serving plate, drizzle with the braising sauce, and top with the garlic sprouts.
Step 3
Rinse the chicken breast and cut into shreds. Marinate with salt and cooking wine. Heat cooking oil in a pan, stir-fry the chicken shreds until just cooked, then arrange on top of the tofu and serve.
