Han's Anchovy Stir-Fried Shiitake Mushrooms

Ingredients

extra virgin olive oil 3 tbsp
oil-packed salted anchovies, chopped (discard the oil in the can) 2
fresh shiitake mushrooms, stems removed and cut into quarters 300 g
garlic cloves, sliced 2
dry white wine 2 tbsp
pepper a pinch
salt a pinch
shredded basil to taste

Instructions

1

Prep

Chop the anchovies and discard the oil from the can. Remove the stems from the mushrooms and cut them into quarters. Slice the garlic.

2

Sauté Garlic

Heat the olive oil in a pan over medium heat until it reaches about 70% of smoking point. Add the garlic slices and briefly sauté until fragrant, but do not let them brown.

3

Sauté Anchovies

Add the chopped anchovies to the pan and stir-fry until their salty aroma releases, then add the mushrooms and stir-fry together. Add a little more oil if the pan looks too dry.

4

Season

Once the mushrooms are evenly coated with the oil and anchovy bits, pour in the white wine and add the salt and pepper. Keep stirring occasionally until the mushrooms release their juices and become tender.

5

Finish

When the mushroom liquid and white wine are nearly reduced, turn off the heat. Toss in the shredded basil, give it a quick stir, then serve.
