Stir-Frying

Place a wok over high heat, add the lard and heat until it reaches about 30% hot. Add the chicken shreds and stir to separate, then remove and drain off the oil. Leave a small amount of oil in the wok, add the chicken shreds, kohlrabi shreds, yellow chive segments, shredded scallion, ginger, garlic, and fine salt. Adjust seasoning to taste, drizzle in a few drops of sesame oil, stir-fry briefly, and serve.
