Homemade Donuts

Classic fried doughnuts with a soft, fluffy texture, finished with a dusting of powdered sugar.

Homemade Donuts

Ingredients

bread flour 180 g
water 95 g
dry yeast (about 5 ml) 1 tsp
butter 18 g
granulated sugar 25 g
egg 25 g
salt 3 g
milk powder 6 g
frying oil (actual usage about 30 g) 250 g
powdered sugar (for dusting) to taste

Step 1

Once the butter has softened, add the granulated sugar and salt, and beat with a whisk until slightly fluffy.

Add the milk powder and mix until evenly combined, then add the egg in several additions, mixing well after each.

The finished butter paste should look like the picture shown.

Dissolve the dry yeast in a small amount of water (taken from the recipe's water amount). Add the flour to the butter paste, then pour in the yeast water and the remaining water.

Knead everything into a dough. Place the dough on a work surface and knead vigorously for a while, or use a stand mixer, until the dough reaches the windowpane stage. Leave the dough to rise at room temperature (cover with plastic wrap or a damp cloth).

Fermentation is complete when the dough has risen to 2.5 times its original size. This usually takes about 1 hour. The warmer the room, the faster the dough will rise and the shorter the time needed.

Press out the gas from the risen dough by hand, then let the dough rest at room temperature for 15 minutes.

Use a rolling pin to roll the rested dough out to a thickness of about 1.1 cm. After rolling, let it rest for another 5 to 10 minutes.

Use a donut cutter to cut the dough into donut shapes.

Place the cut donut dough on a floured baking sheet. The leftover scraps can be gathered back into a dough, left to relax for 15 minutes, then rolled out and cut again. The cut donuts require a second rise. Do not use too high a temperature for the second rise. In summer, simply cover the donuts with plastic wrap or a damp cloth and let them rise at room temperature for 40 minutes to 1 hour, until doubled in size. In winter, place the donuts in the oven together with a tray of warm water to keep the inside of the oven warm and humid so the dough can rise properly.

Heat the oil in a deep pot, then gently place the proofed donut dough into the hot oil.

When one side is done, flip the donut over in time. Fry until both sides are golden brown. Drain the fried donuts well, then place them on a cooling rack. Once the donuts have cooled completely, dust the surface with powdered sugar as decoration and serve.
