Ingredients

all-purpose flour 2 cups
sugar ½ cup
baking powder 2 teaspoons
salt ¼ teaspoon
aniseed (also called anise seed) 1½ tablespoons
white wine ½ cup
olive oil ½ cup
sugar (for Cinnamon Sugar) 6 tablespoons
ground cinnamon (for Cinnamon Sugar) 2 tablespoons

Instructions

1

Preheat oven

Preheat the oven to 350°F. Line 1 or 2 cookie sheets with parchment paper.

2

Make dough

Whisk together the flour, sugar, baking powder, salt, and aniseed in a large bowl. Using a wooden spoon, stir in the wine and olive oil until fully combined.

3

Make cinnamon sugar

Whisk together the sugar and cinnamon in a shallow bowl.

4

Shape cookies

Pinch off 1-inch chunks of dough and roll them between your hands (or on a flat surface) to form thin ropes about 6 inches long and about the thickness of a pencil. Gently toss in the cinnamon sugar to coat. Shape the ropes into an S and place on the prepared sheet(s), arranging them about an inch and a half apart.

5

Bake

Bake for 17 to 20 minutes or until the cookies are browned and feel mostly firm. (They will firm up more as they cool; the longer time yields a crunchier and slightly darker cookie.) If using 2 cookie sheets, rotate them from top to bottom and front to back about halfway through baking. Transfer the cookies to a rack to cool.
