Pear and Lotus Root Puree
In autumn, lotus root and snow pear come into season, offering a sweet, crisp bite and naturally lung-moistening properties. Today I'm pairing them to make a refreshing Snow Pear and Lotus Root Paste. Because lotus root is rich in starch, the finished drink has a silky, rice-paste-like consistency. The method couldn't be simpler—just use the rice-paste setting on a high-speed blender and it's done in one touch. Don't miss this seasonal treat. Since snow pear is naturally sweet, I skipped the sugar for a lightly sweet flavor; if you prefer it sweeter, add rock sugar during blending or stir in honey once the paste has cooled slightly.
