Pork Chops with Onion

Ingredients

boneless pork chops (slice thinly into 6 pieces and pound both sides with the back of a knife) 285 g (10 oz)
water 1 tbsp
Chinese dark soy sauce 1 tbsp
Chinese light soy sauce 1 tsp
Shaoxing cooking wine 1 tsp
sesame oil 1 tsp
cornstarch 1 tsp
sugar 1/2 tsp
garlic powder a pinch
ground pepper a pinch
cooking oil 2 tbsp
onion (thinly sliced) 1/2
salt a pinch
tomato juice 1 tbsp

Instructions

1

Prepare the pork

Slice the pork chops thinly into 6 pieces. Pound both sides of each piece with the back of a knife.

2

Marinate

Place the pork in a deep dish in a single layer. Add the marinade and let it stand for 15 minutes, turning the pieces once halfway through.

3

Sear the pork

Preheat a frying pan over high heat for 6 minutes. Add the oil and heat for another 1 minute. Arrange the pork in a single layer and cover it with a paper plate to prevent splattering. Sear over high heat for 2 minutes.

4

Flip the pork

Turn the pork over and sear over high heat for another 2 minutes. Transfer it to a plate with the first seared side facing up.

5

Cook the onion sauce

Add the onion to the frying pan, sprinkle in the salt, and pour in the tomato juice. Cook over high heat for 2 minutes, then spoon the onion mixture over the pork and serve.
