Sesame Oil Pork Kidneys
A classic Taiwanese dish featuring pork kidneys that are deveined, blanched, then stir-fried with sesame oil, shredded ginger, and rice wine.

Pork kidneys (cut in half, remove tendons, wash clean)

Prepare the pork kidneys
First cut the pork kidneys in half, use a sharp knife to carefully remove any sinew and impurities, wash them thoroughly until clean, then plunge them into ice water to chill and firm up.

Score the surface
Score a decorative crosshatch pattern across the surface of each kidney piece.

Stir-fry over high heat
The heat must be very high. When the sesame oil is heated until smoking, add the pork kidneys immediately and toss once or twice, then add the julienned ginger, salt, and rice wine. It is done.
