Prepare the Ingredients
Cut the tofu into strips 3 cm long, 2 cm wide, and 1 cm thick; peel and wash the green onions, then cut into 2 cm long segments; peel and wash the ginger, then mince, and set aside.
Fry the Tofu
Heat a wok over high heat, add the soybean oil. When the oil is about 70% hot (roughly 175°C), add the tofu strips and fry until golden brown on both sides. Remove, drain the oil, and discard any excess.
Finish the Stir-Fry
Add 25 g of soybean oil to the wok and heat over high heat. Add the green onion segments and minced ginger, stir-fry briefly, then add the shrimp and stir-fry briefly. Pour in the soy sauce, cooking wine, and a pinch of sugar. Once it comes to a boil, add the tofu, reduce to low heat, and simmer for 3 minutes. Stir in the monosodium glutamate, thicken with a cornstarch slurry, drizzle with chili oil, and serve.
