Sichuan steamed chicken with notoginseng (Sanqi): a hen is steamed with notoginseng slices and finished with a sprinkle of notoginseng powder. Traditionally valued for strengthening the body and enriching the blood.

Steamed Chicken with Notoginseng

Ingredients

hen 1 (about 1000 g)
notoginseng (part ground, part sliced) 20 g
cooking wine 10 g
ginger (sliced) 10 g
scallion (cut into segments) 10 g
MSG 1 g
salt 3 g

Ingredient preparation

After slaughtering the chicken, remove the feathers, internal organs, and feet, wash thoroughly, chop into small pieces, and place in a steaming bowl.

Preparing the notoginseng

Grind part of the notoginseng into powder and set aside. Steam the remaining notoginseng until soft, then cut into thin slices.

Preparing the aromatics

Wash the ginger and scallions. Slice the ginger and cut the scallions into segments; set aside.

Steaming

Place the notoginseng slices in the steaming bowl, lay the ginger and scallions over the chicken, add an appropriate amount of water, pour in the cooking wine and salt, and steam over boiling water for about 2 hours.

Seasoning

Once out of the steamer, discard the ginger and scallions, season with MSG, then sprinkle the notoginseng powder over the chicken and mix well. Serve immediately.
