Steamed Winter Melon Threads

Ingredients

Winter melon (peeled, deseeded, sliced thin, then cut into ~10 cm silver-needle threads) 500 g
Cooked lean ham (cut into thin strips) 50 g
Fine starch (dusted on the winter melon threads) 15 g
Sichuan salt 2 g
Clear broth 500 g
MSG 1 g

Instructions

1

Prepare the Winter Melon

Peel and deseed the winter melon, slice into thin pieces, then cut into silver-needle threads about 10 cm long. Dust with fine starch.

2

Prepare the Ham

Cut the cooked ham into thin strips.

3

Blanch

Bring water to a boil in a wok, add the winter melon threads and blanch until they turn white and glossy. Lift out and refresh in cold water.

4

Steam

Drain and arrange the threads neatly in a soup bowl. Add Sichuan salt, the ham strips, clear broth, and MSG. Steam over a gentle heat until the melon threads absorb the flavors, then serve.
