baked fish and rice
A one-pot bake of fish fillets with broccoli, rice, onions, and cheese.
Ingredients
boiling chicken broth
1 1/2 cups
uncooked long grain rice
1/2 cup
Italian seasoning
1/4 teaspoon
garlic powder
1/4 teaspoon
frozen chopped broccoli (thawed and drained)
10 ounces
grated Parmesan cheese
1 tablespoon
french-fried onions (divided)
1 can (2.8 ounces)
fresh or frozen fish fillets (thawed)
1 pound
paprika
Dash
shredded cheddar cheese
1/2 cup

Step 1
Mix the chicken broth, rice, Italian seasoning, and garlic powder in a greased 11x7x2 inch baking dish. Cover and bake at 375°F for 10 minutes. Stir in the broccoli, Parmesan cheese, and half of the french-fried onions. Top with the fish fillets and sprinkle with paprika.

Cover and bake for another 20-25 minutes, until the fish flakes easily with a fork. Uncover; sprinkle with the cheddar cheese and the remaining french-fried onions. Return to the oven and bake for about 3 minutes until the cheese melts.
