Stir-fried Chicken Brains
Braise the cooked chicken brains in thick broth and thicken with starch; arrange in the center of the plate and surround with stir-fried ham and other garnishes.

Step One
Put the chicken heads into boiling water and cook for about one hour. Take them out, peel the heads open, scoop out the chicken brains, and place them on a plate.
Step Two
Heat lard in a pan, add half a small bowl of thick broth together with the wine and salt, and bring to a boil. Then add the chicken brains and simmer for about three to four minutes. Immediately stir in the arrowroot powder to form a light, thickened gravy, and plate the mixture in the center of a serving dish.
Step Three
Separately, stir-fry the ham in an oiled pan (mushrooms, peas, small baby bok choy hearts, clover sprouts, or similar ingredients may all be used), then arrange the cooked garnish around the edges of the dish.
