Stir-fried Pork with Garlic Shoots

This is a classic home-style dish and one of my son’s and my absolute favorite recipes. Even though it’s a simple, everyday dish, nailing the perfect stir-fry texture is no easy task.

Stir-fried Pork with Garlic Shoots

Ingredients

garlic shoots 500g
pork as needed
cooking wine as needed
salt as needed
starch as needed
five-spice powder as needed
light soy sauce as needed
chicken bouillon powder a pinch
vegetable oil as needed
chopped scallions as needed
shredded ginger as needed

Instructions

1

Step 1

Cut the pork into thin strips and marinate with cooking wine, light soy sauce, starch, chicken bouillon powder, and five-spice powder for 10 minutes.

2

Step 2

Select tender garlic shoots, wash and cut into segments, set aside.

3

Step 3

Add vegetable oil to the pan. Once hot, add chopped scallions and shredded ginger to release the aroma.

4

Step 4

Add the marinated pork strips and spread them out, stir-frying until they all change color.

5

Step 5

Transfer the cooked pork strips to a bowl and set aside.

6

Step 6

Heat a new pan with oil, add the garlic shoots and stir-fry briefly. Add light soy sauce and salt, stir-fry briefly, then add a small amount of water and continue stir-frying. Taste as you go for texture; once the desired tenderness is reached, add the pork strips, stir-fry briefly, and serve.

7

Step 7

Do not reduce the sauce completely; leaving a little makes it delicious with rice.

8

Step 8

The finished dish has a beautiful color.
