Sweet Papaya Stir-Fried Black Chicken Dice

Ingredients

chicken breast and thigh meat (cut into small cubes) 350 g
MSG 3 g
green papaya (diced) 100 g
soy sauce 10 g
fine salt 10 g
wet starch 15 g
white wine 5 g
green chili (diced) 20 g
scallion (cut into small diagonal sections) 10 g
lard 500 g
ginger (cut into oval slices) 15 g

Preparation and Coating

Cut the chicken breast and thigh meat into small cubes, then add salt, MSG, and wet starch to coat. Dice the green papaya and green chili. Cut the scallion into small sections on the diagonal. Slice the ginger into oval pieces.

Oil Blanching

Place the wok over heat, add lard, and heat to 40% of full heat. Add the chicken cubes and papaya, stir-fry until just cooked, then drain off the oil.

Stir-Frying and Seasoning

Place the wok over heat, add lard. When the oil is hot, add the scallion, ginger, and chili, and stir-fry until fragrant. Add the chicken cubes and diced papaya, and stir-fry to combine. Add soy sauce, white wine, MSG, and wet starch. Toss the wok several times, drizzle with clear oil, mix well, then transfer to a serving plate.
