Banana and Apricot Pearl Soup

Ingredients

Banana (peeled, mashed into a fine paste) 2 bananas
Apricots (peeled, pitted, stuffed with date paste) 250g
Date paste 300g
Green plums (washed, steamed until tender) 50g
Honey osmanthus 0.5g
Condensed milk 5g
Sugar syrup 5g
White sugar 200g

Instructions

1

Prepare apricot pearls

Blanch the apricots in boiling water briefly, then remove, peel, cut a small slit at the stem end to remove the pit, stuff with date paste and sugar syrup, wrap tightly (this forms "apricot pearls"), and steam in a steamer until fully cooked. Wash the green plums, place them in a bowl, add 75g of water, steam in a steamer until tender, and set aside.

2

Prepare banana paste

Peel the banana, mash it into a fine paste using the edge of a knife, then place it in a bowl.

3

Assemble the dish

Place the "apricot pearls" into a large soup bowl. Heat a wok over high heat, add 300g of water, add the banana paste, then add white sugar, condensed milk, and honey osmanthus syrup, bring to a boil. Pour the boiling mixture into the large soup bowl containing the "apricot pearls", add the prepared green plums, and serve immediately.
