Ingredients

cake flour (low-gluten flour) 40 g
white sesame seeds (toasted) 50 g
butter (melted) 10 g
fine granulated sugar 30 g
egg white 16 g
black sesame seeds (toasted) 25 g
baking soda (about 0.625 ml) 1/8 tsp

Instructions

1

Prepare the sesame

If the black and white sesame seeds are raw, toast them separately in advance and set aside. Combine the white sesame seeds and fine granulated sugar in a food processor and grind into a powder.

2

Mix the dough

Melt the butter over a double boiler until liquid, then pour it over the sifted cake flour and baking soda. Add the ground white sesame with sugar and the black sesame seeds. Add the egg white a little at a time, kneading by hand continuously, until a dough forms.

3

Shape and freeze

Place the dough on a work surface, shape by hand into a long log, then transfer to the freezer for about 1.5 hours until frozen solid.

4

Bake

Remove the frozen dough and cut into slices about 0.8 cm thick. Arrange on a baking tray and place in the preheated oven. Bake at 165°C for about 20 minutes until the surface is lightly colored. Turn off the oven and leave the slices inside for another 10 minutes before removing.
