Braised Hairy Melon with Dried Scallops

Ingredients

hairy melon (peeled, washed, and halved lengthwise) 3, about 450 g
dried scallops (soaked in 1/2 cup water until soft, then shredded) 3 large or broken dried scallops (2 tbsp)
salt (or to taste) 1/2 tsp
oil (for seasoning) 2 tsp
sesame oil (for seasoning) 1 tsp
cornstarch (for seasoning) 1 tsp
water (for seasoning) 2 tsp
oyster sauce (for seasoning) 2 tsp
white pepper (for seasoning) a pinch
Shaoxing wine (for steaming the scallops) 1 tsp
sugar (for steaming the scallops) 1/2 tsp
ginger (for steaming the scallops) 1

Instructions

1

Prepare the scallops

Place the dried scallops in a 1/2-liter glass measuring cup, soak them in 1/2 cup water until softened, and shred them. Add the wine, sugar, and ginger slice, then cover securely. Heat on high for 2 minutes, reduce to low (30% power), and heat for another 5 minutes.

2

Prepare the hairy melon

Peel the hairy melon, rinse it clean, and halve each piece lengthwise. Place the pieces on plastic wrap with the cut sides facing down, then wrap each into a long roll, making 3 rolls in total. Arrange them near the edge of the microwave turntable. Heat on high for 7 minutes. Remove and rinse thoroughly with cold water to preserve the bright green color.

3

Braise the melon

Arrange the melon along the short side of a flat-bottomed glass baking dish (25 × 15 × 4 cm), with the cut sides facing up. Stir the salt into the scallop liquid and pour it into the dish. Arrange the shredded scallops on both sides of the melon and cover tightly with plastic wrap. Heat on high for 7 minutes, turning the melon over halfway through.

4

Thicken the sauce

Carefully remove the melon from the dish. Move the two center pieces aside to make room, pour in the remaining seasonings, and stir directly in the dish. Heat on high for 30 seconds. Return the melon to its original arrangement, top it with the shredded scallops, and heat for another 30 seconds, until the sauce thickens. Serve straight from the dish.
