Ingredients

Beef 1 jin (about 500g)
Cilantro Appropriate amount
Ginger and garlic Appropriate amount
Bird's eye chilies 8
Pickled peppers 5

Instructions

Step 1

Add a little salt, light soy sauce, oyster sauce, and a slurry of starch and water to the beef and mix well, then add a little peanut oil and mix well; marinate for 10 minutes.

When the oil is hot, add the marinated beef and quickly stir-fry to separate the pieces; stir-fry until the color changes, then remove and set aside. When the oil is hot again, add minced ginger and garlic, bird's eye chilies, and pickled peppers and stir-fry until fragrant. Pour in a little light soy sauce to season, then add the beef back in and stir-fry until evenly combined.

Add appropriate amounts of soy sauce, oyster sauce, and a pinch of salt and stir-fry until evenly combined, then add cilantro and a little chicken essence and stir-fry until just combined.
