Hamburger
A Chinese-style hamburger recipe featuring bread flour, cake flour, sugar, milk, and yeast.

Step 1
Pour 260g of milk and 5g of yeast powder into the stand mixer.
Step 2
Pour 400g of bread flour, 100g of cake flour, 1 egg, 5g of salt, and 60g of granulated sugar into the stand mixer together.
Step 3
Then start the mixing program. Mix until the entire surface of the dough is smooth and elastic.
Step 4
Add 25g of butter, continue mixing for 5 minutes, then mix until the dough can be stretched into a smooth film.
Step 5
Then knead the dough until smooth, and place it into a stainless steel bowl.
Step 6
Ferment at room temperature (30°C, 75% humidity) covered with a damp cloth for 50 minutes to make the sweet dough.
Step 7
Divide the dough into 60g portions, roll each into a round shape, cover with a damp cloth and let rest for 20 minutes.
Step 8
Take one portion of dough, knead it evenly, and place it on the baking tray. Ferment at 30°C and 75% humidity for 50 minutes, then put it into the oven, and place a bowl of boiling water at the bottom of the oven.
Step 9
Cover with plastic wrap and let ferment until it doubles in size.
Step 10
Prepare the egg wash.
Step 11
Brush a layer of egg wash on the surface, then sprinkle a layer of white sesame seeds evenly.
Step 12
Put it into a 42L Galanz oven, bake at 200°C (upper heat) and 180°C (lower heat) for 13 minutes. Note that temperature and time settings vary depending on the brand and size of each oven.
Step 13
Take two slices of bread, lettuce, and 2 slices of cheese.
Step 14
Then start frying the eggs and ham slices.
Step 15
The dish is ready. It looks perfect, great for a quick meal, really delicious.
