300 g
ginger pieces
10 g
chopped scallions
a pinch
MSG
to taste
ground pepper
to taste
salt
a pinch
Instructions
1
Prepare the pork trotter
Singе the cured pork trotter over a flame, then soak it in warm water for 15 minutes. Scrub it clean with a knife and set aside.
2
Simmer the soup
Place the pork trotter in a pot with water and bring it to a boil, skimming off the foam. Add the ginger pieces and ground pepper, then simmer over low heat until the meat is about seven-tenths done. Remove the trotter and cut it into pieces; return the pieces to the pot, season with MSG and salt, and simmer until fully cooked. Pick out the ginger, transfer the soup to a serving bowl, and garnish with the chopped scallions.
